In the Garden: Tips for harvesting garlic

Garlic should be harvested when its top leaves are still a little green.

After the garlic has cured down, you can start trimming it so you can store it later in the year and make it last longer.

You'll want to cut off the roots and cut off the stem and then you can store it or eat it right away. If you harvest it a bit early, that's okay, your cloves will just be a little bit smaller.
